Quail egg salad with champignons

7 quail eggs
300g lettuce
100g champignons
50g spring onions or chives
3 soup spoons olive oil
3 soup spoons vinegar
0.5 teaspoon salt
2 soup spoons butter
Parsley (garnish)

Put 7 quail eggs into a pot and add water, bring water to boil and boil the quail eggs for 3-4 minutes.
Pour the hot water away, rinse the eggs under cold water and peel the quail eggs.

Meanwhile, slice champignons. Heat pan then add butter and champignons.
Fry champignons till they are golden color ( 3-5 min).

Slice lettuce and spring onions, add champignons to the bowl with lettuce and spring onions.
Slice boiled quail eggs and add to the bowl.

Mix vinegar, olive oil and salt and add to the bowl, mix all ingredients evenly and garnish with parsley.
