Dipping salts for boiled quail eggs

Smoky sweet
tbsp sweet smoked paprika
A pinch of cayenne pepper
3 tbsp sea salt
Green onion
1 tbsp chopped chives
tsp cracked black pepper
tbsp lemon zest
3 tbsp sea salt
tbsp togarashi seasoning
1 tbsp black or white sesame seeds, toasted
3 tbsp sea salt

Celery salt is a traditional condiment for boiled eggs, but here are three modern alternatives.
Grind the ingredients together with a mortar and pestle, or blitz in a processor.
Togarashi is a Japanese spice blend which you?ll find in select Asian groceries;
sweet smoked paprika is sold in Spanish or Hungarian delis.
